your right you need something bigger than a pontoon Boat, what you need is a large boat almost like a pontoon but have the bow of a speed boat and make the boat very long bigger than a pontoon boat and then, well rest you do on your own

I don't have a boat, but I do land my T-28 Trojan with a tail hook on a concrete pad that is about the size of a scale carrier deck. I found the key to more successful landings was multiple arrestor cables, suspending the cables off the deck with beads, and lots of practice. I have a T-45 that I plan to hook with as well ... that's the jet the Navy uses to CQ new pilots. I capture my landings with an on board camera. I would really like to see what yours looks like from an on board view.

someone converted a higgens boat into a carrier. it was much bigger and better than this pontoon boat. it also had rc corsairs for accurate portrayal.
